06 - 1/2 cup cold unsalted butter, cubed
07 - 1 cup sharp cheddar cheese, shredded
08 - 1/2 cup cold cream soda (not diet)
09 - 1/2 cup cold buttermilk
→ Sweet Tea Glaze
10 - 1/2 cup brewed strong sweet tea, cooled
11 - 2 tablespoons honey
12 - 1 tablespoon unsalted butter, melted
→ Assembly
13 - 12 wooden or metal skewers
14 - Extra shredded cheddar cheese for garnish (optional)
15 - Fresh chives, finely chopped (optional)
# Directions:
01 - Preheat the oven to 425°F. Line a baking sheet with parchment paper and set aside.
02 - In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, fine sea salt, and granulated sugar until well combined.
03 - Using a pastry cutter or fork, cut the cold cubed butter into the flour mixture until it resembles coarse crumbs.
04 - Fold the shredded sharp cheddar cheese into the crumb mixture, dispersing evenly.
05 - In a separate bowl, stir together the cold cream soda and cold buttermilk.
06 - Pour the liquid mixture into the dry ingredients and gently mix just until combined; do not overwork the dough.
07 - Transfer dough onto a floured surface. Pat down to about 1-inch thickness and cut into 1.5-inch rounds or squares.
08 - Arrange biscuits on the prepared baking sheet. Bake for 15 to 18 minutes, or until golden brown.
09 - While the biscuits bake, whisk together the cooled strong sweet tea, honey, and melted butter until fully blended.
10 - Immediately upon removing biscuits from oven, generously brush each with the sweet tea glaze.
11 - Allow biscuits to cool slightly. Carefully thread 2 to 3 warm biscuits per skewer. Garnish with extra cheddar cheese and fresh chives if desired. Serve warm.
