# Directions:
01 - Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
02 - On a lightly floured surface, roll out the dough to approximately 1/4 inch (6 mm) thickness. Cut out 8 maple leaf shapes using a 4 inch (10 cm) cookie cutter and arrange on the prepared baking sheet.
03 - Combine tomato sauce, maple syrup, minced garlic, dried oregano, salt, and pepper in a small bowl and mix well.
04 - Spread a thin layer of the sauce evenly onto each dough leaf.
05 - Sprinkle shredded mozzarella and cheddar cheese evenly over the sauce layer.
06 - Distribute red, yellow, and orange bell pepper slices, red onion, chopped spinach, and optional corn kernels over the cheese, creating a colorful arrangement.
07 - Lightly brush the edges of each dough leaf with olive oil to promote browning.
08 - Bake in the preheated oven for 13 to 15 minutes or until the cheese is melted and bubbly and the edges are golden brown.
09 - Allow the mini pizzas to cool slightly before serving to enhance flavor and handling.
