# Directions:

01 - Preheat oven to 375°F. Grease a 9x13-inch casserole dish.

03 - Add diced onion, red bell pepper, and garlic to skillet. Sauté for 3 to 4 minutes until softened.
04 - Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 1 minute until fragrant.
05 - Add uncooked rice, diced tomatoes with juices, tomato sauce, and beef broth to the skillet. Mix thoroughly.
06 - Fold in black beans and 1 cup of shredded cheddar cheese.
07 - Spread the mixture evenly in the prepared casserole dish.
08 - Cover tightly with foil and bake for 30 minutes.
09 - Remove foil, sprinkle remaining 1/2 cup cheddar cheese over dish, and bake uncovered for an additional 10 minutes until cheese melts and rice is tender.
10 - Let rest for 5 minutes before serving. Garnish with cilantro, jalapeños, and sour cream if desired.
