# Components:

→ Egg Mixture

01 - 3 large eggs, separated
02 - 3 tablespoons granulated sugar
03 - 3 tablespoons cornstarch
04 - 1/4 teaspoon cream of tartar
05 - 1/4 teaspoon vanilla extract

→ Color Additions

06 - Red gel food coloring
07 - Yellow gel food coloring
08 - Blue gel food coloring
09 - Green gel food coloring

# Directions:

01 - Preheat oven to 300°F. Line a baking sheet with parchment paper for easy release.
02 - Using an electric mixer on medium speed, combine egg whites and cream of tartar in a clean bowl until soft peaks form. Gradually incorporate granulated sugar, continuing to beat until stiff, glossy peaks are achieved.
03 - In a separate mixing bowl, whisk egg yolks with cornstarch and vanilla extract until the mixture is smooth and fully combined.
04 - Carefully fold the egg yolk mixture into the whipped egg whites, using a spatula and gentle motions to maintain as much volume as possible.
05 - Divide the batter evenly into four bowls. Add several drops of the desired gel food colorings to each bowl and gently fold to evenly distribute the color without deflating the batter.
06 - Spoon the colored batters onto the parchment-lined sheet in adjacent dollops to form a rainbow effect. Optionally, swirl the colors using a spatula to create a marbled pattern.
07 - Transfer to oven and bake for 25 minutes, or until the tops are set and lightly golden.
08 - Allow bread to cool briefly on the baking sheet before removing. Serve immediately to enjoy the lightest, fluffiest texture.
