11 - 1/4 cup nonfat Greek yogurt
12 - 1/2 cup shredded part-skim mozzarella cheese

# Directions:
01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - Toss potato rounds with olive oil, salt, and black pepper. Arrange in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway, until golden and tender.
03 - Heat olive oil in a large skillet over medium-low heat. Add sliced onions, salt, and sugar. Cook, stirring frequently, for 20-25 minutes until deep golden brown. Stir in balsamic vinegar and cook for 1 more minute. Remove from heat.
